Vegan Veggie Croquettes

These vegan veggie croquettes are crispy on the outside and soft on the inside, packed with mashed potatoes, quinoa, and mixed vegetables. They make a delicious and nutritious snack or appetizer for any occasion.

Ingredients:

  • 2 cups mashed potatoes

  • 1 cup cooked quinoa

  • 1 cup finely chopped mixed vegetables carrots, peas, corn

  • 1/2 cup breadcrumbs

  • 2 tablespoons nutritional yeast

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon paprika

  • Salt and pepper to taste

  • 2 tablespoons olive oil

Instructions:

In a large bowl, combine mashed potatoes, cooked quinoa, mixed vegetables, breadcrumbs, nutritional yeast, garlic powder, onion powder, paprika, salt, and pepper


Mix well until everything is evenly incorporated


Form the mixture into small croquette shapes using your hands


Heat olive oil in a skillet over medium heat


Place the croquettes in the skillet and cook until golden brown and crispy on all sides, about 4-5 minutes per side


Once cooked, remove from the skillet and place on a paper towel-lined plate to drain any excess oil


Serve hot with your favorite dipping sauce
