Pumpkin Mini Waffles

These vegan and gluten-free pumpkin mini waffles are perfect for a cozy breakfast or brunch. They're fluffy, flavorful, and easy to make!

Ingredients:

  • 1 cup gluten-free all-purpose flour

  • 1/4 cup coconut sugar

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • 1/4 teaspoon ground ginger

  • 1/4 teaspoon ground cloves

  • 3/4 cup unsweetened almond milk

  • 1/2 cup pumpkin puree

  • 2 tablespoons melted coconut oil

  • 1 teaspoon vanilla extract

Instructions:

Preheat your mini waffle iron


In a large mixing bowl, whisk together the flour, coconut sugar, baking powder, baking soda, salt, and spices


In another bowl, whisk together the almond milk, pumpkin puree, melted coconut oil, and vanilla extract


Pour the wet ingredients into the dry ingredients and stir until just combined


Be careful not to overmix


Lightly grease the waffle iron with coconut oil or cooking spray


Pour a small amount of batter onto the waffle iron amount will depend on the size of your waffle iron


Cook according to the manufacturer's instructions until golden brown and crisp


Repeat with the remaining batter


Serve warm with your favorite toppings, such as maple syrup, fresh fruit, or dairy-free whipped cream
