Gluten-Free Balsamic Beet Salad

This gluten-free balsamic beet salad with arugula, goat cheese, and walnuts is bursting with flavor and nutrition. Roasted beets add a sweet earthiness, while creamy goat cheese, peppery arugula, and crunchy walnuts create a delightful texture and taste contrast. The tangy balsamic dressing ties everything together for a refreshing and satisfying salad experience.

Ingredients:

  • 4 medium beets, roasted and diced

  • 4 cups arugula

  • 1/2 cup crumbled goat cheese

  • 1/2 cup chopped walnuts, toasted

  • 3 tablespoons balsamic vinegar

  • 2 tablespoons extra virgin olive oil

  • Salt and pepper to taste

Instructions:

Turn on the oven and heat it up to 400F 200C


Clean the beets, cut off the tops, and wrap each one in aluminum foil


For 45 to 60 minutes, or until soft when poked with a fork, roast the beets in an oven that has already been heated up


Let the roasted beets cool down a bit, then cut them into small pieces


Add the olive oil, salt, and pepper to a small bowl and mix them together with a whisk


This will make the dressing


Put the arugula, roasted beets, goat cheese, and toasted walnuts in a large salad bowl


Pour the dressing over the salad and gently toss it to coat it


Serve right away, and if you want, top with more goat cheese and walnuts
