Gingerbread Cookies with Eggnog Icing

These Gingerbread Cookies with Eggnog Icing are the perfect Christmas cookies, filled with warm spices and a delightful eggnog-flavored icing. They're great for holiday parties, gift-giving, or enjoying with a cup of hot cocoa.

Ingredients:

  • 2 1/2 cups all-purpose flour

  • 1/2 cup unsalted butter, softened

  • 1/2 cup granulated sugar

  • 1/2 cup molasses

  • 1 large egg

  • 1 teaspoon ground ginger

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground cloves

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 cup powdered sugar

  • 2 tablespoons eggnog

  • 1/4 teaspoon vanilla extract

Instructions:

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy


Add the molasses and egg to the mixture, and mix until well combined


In a separate bowl, whisk together the flour, ground ginger, ground cinnamon, ground cloves, baking soda, and salt


Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms


Divide the dough in half, and shape each half into a disc


Wrap them in plastic wrap and refrigerate for at least 2 hours


Preheat your oven to 350F 175C and line a baking sheet with parchment paper


On a floured surface, roll out one disc of chilled dough to about 1/4-inch thickness


Use cookie cutters to cut out desired shapes and place them on the prepared baking sheet


Bake the cookies for 8-10 minutes or until the edges are lightly browned


Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely


For the eggnog icing, whisk together the powdered sugar, eggnog, and vanilla extract until smooth and creamy


Once the cookies have cooled, drizzle or spread the eggnog icing on top of each cookie


Let the icing set before serving or storing the cookies in an airtight container
