Esquites Mexican Corn Salad Avocado Toast

Traditional Mexican street corn salad (esquites) and creamy avocado on toast come together in this Esquites Mexican Corn Salad Avocado Toast. It's a tasty snack or light meal that fills you up.

Ingredients:

  • 4 slices of bread

  • 2 ripe avocados

  • 1 cup of corn kernels, cooked

  • 1/4 cup of red onion, finely chopped

  • 1/4 cup of cilantro, chopped

  • 1 jalapeo pepper, finely chopped

  • 1 lime, juiced

  • Salt and pepper to taste

  • 1/2 cup of crumbled cotija cheese

  • 1 tablespoon of olive oil

Instructions:

Toast the pieces of bread until they turn golden brown


Mash the ripe avocados with salt, pepper, and lime juice in a bowl


On each piece of toasted bread, spread the avocado spread out


Put the cooked corn kernels, chopped red onion, cilantro, jalapeo pepper, and olive oil in a different bowl


Add pepper and salt


Spread an equal amount of the corn salad mixture on each toast's avocado spread


Add crumbled cotija cheese to the top of each toast


Serve right away and enjoy!
