Instructions:In a large bowl, mash the chickpeas until they are mostly smooth Add the chopped mushrooms, onion, garlic, breadcrumbs, Parmesan cheese, soy sauce, paprika, cumin, salt, and pepper to the bowl Mix well to combine Divide the mixture into four equal portions and shape each portion into a patty Heat the olive oil in a skillet over medium heat Cook the patties for 4-5 minutes on each side, or until they are golden brown and heated through Toast the burger buns if desired, then assemble the burgers with lettuce leaves, tomato slices, and any other desired toppings Serve hot and enjoy!
